Perfect roast dinner . This is mildly spiced roast that is ideal for the whole family
The lamb is marinated for 24 hours for perfect taste
Whole leg of lamb 2 kg
1/2 cup onions
2 tbsp oil or butter
1 tsp peppercorns
1 tsp cumin
1 tsp coriander seeds
1 large red onions
4-5 garlic cloves
Mix for marinade:
1 cup plain yogurt
5-6 garlic cloves
1 tbsp cumin powder
1 tbsp coriander powder
1 tbsp paprika
1 tbsp Garam masala
1 tbsp briani masala (can be bought in ethic isle of supermarket or ethnic shop)
1 tsp honey
Wash leg of lamb. Make sure you remove excess fat.
With a sharp knife, make deep cut into lamb
Season with salt and pepper.
For the marinade
Grate or mince garlic , add honey, all spices and yogurt. Mix well
Rub marinade into lamb. Make sure you push it through the deep cuts.
Put in a non metal dish and cover with cling film.
Leave in fridge overnight.
Remove from fridge allow lamb to get to room temperature
Preheat oven. 180 deg in a fan oven.
Chop the red onions and lime baking tray.
Rest lamb on onions
Heat oil or butter in a frying pan . Add garlic and whole spices . As they start to sizzle , pour it over lamb.
Add fried onions
Pour half cup of water in tray
Add this point you can also add chopped potatoes if you wish .
Wrap tightly with foil and leave it to cook in oven for 1 1/2 hours. Check lamb and baste with own juices.
Cover and allow to cook for another 45 min or until lamb is tender and coming off bone
Remove for and allow to brown a bit more for another 20-30 min.
At this point if you. Have added potatoes in tray they should be cooked too
Garnish with coriander and fried onions
Serve with pilau rice or vegetables.
