Banana Tart ( tarte banane)

This is one of my favourite afternoon snack. You can buy ‘tarte banane’ in any bakery in Mauritius. I remember my mum baking them from scratch at home.

I use ready made shortcrust pastry. You can make your own pastry if you want.


2 packet of ready rolled shortcrust pastry

6-7 over ripe bananas

1 tablespoon soft unsalted butter

2 tablespoons of cocoa powder

2 tablespoons of brown sugar

1-2 tablespoons of caster or granulated sugar

1 teaspoon vanilla extra


Butter your tarte dish and line the pastry. You probably need 1 pack depending on the size. I use a 26 cm diameter. If u need extra pastry, make sure the ends of  the separate sheets overlap . Pressed or roll together.

You can also use individual tart cases.

Chill in fridge while preparing

Peel and chop your bananas in pieces then mash with a fork

Put on low heat.

Add butter and sugar.

Keep stirring while mixture heating up and sugar and butter melting

When it like above. Add vanilla and keep mixing

Taste the mixture, add more sugar if not sweet enough and keep stirring.

This will all depends on the sweetness of your bananas.

It should stay getting darker. At this stage add the cocoa powder

Use any good quality one

The mixture will look like below.

Allow banana mixture to cool down. In meantime switch oven to 200 deg Celsius or 180 deg on fan oven.

Cut the second remaining pastry in 1cm width strip.

Once cooled down, pour banana mixture into pie dish. Make a lattice on top

Brush some milk or egg wash for s golden brown finish.

Bake for about 20 min or until golden brown.

Allow to cool and enjoy!
